It’s my last day in Melbourne and obviously, brunching is required. Recommended by a local Melbournite, we arrive to Pillar of Salt in the trendyarea of Richmond.

The cafe is busy for a Monday morning. We were immediately welcomed by a friendly waitress who showed us our seating options - opting for the window bench overlooking Church Street. The service was great, despite being busy, we never felt neglected.

Perusing the extensive menu, I took the leap of faith and demandedordered the AM salad- mixed morning grains, chai soaked currants, rocket, herbs, almonds, cumin labne, poached egg.

Praise sweet Jesus, my leap of faith paid off! Without a doubt one of the best breakfasts I’ve consumed, anywhere in Australia. Crunchy, flavoursome textures - the unusual fusion of ingredients worked in perfect harmony.

The eggs were cooked to perfection, the almonds and chai soaked currants provided the dish with an addictive synthesis of bold flavouring with remarkable consistency.

My friend ordered the Pillars red chilli scrambled eggs, julienne bacon, spring onion, parsley, parmesan (minus the bread).

Another standout dish - the blend of chilli, bacon and cheese gave the eggs adequate amounts of heat whilst retaining that classic addictiveness when combining ham and cheese.

There were times when the cafe did feel somewhat generic, but not much to fault either. It’s simply a great café that is extremely likeable. The staff were friendly and attentive, and the food was highly satisfying. Popular with good reason, I’m looking forward to returning next time I’m in Melbourne.
